Caprese bites are the easiest appetizer for any party, whether it’s a formal cocktail party, an outdoor picnic, or a casual dinner party, these easy bites are perfect! I recently made these for a Summer Soiree that my roommates and I threw as a semi housewarming/end of summer celebration. These were the perfect addition to my “Snack” menu, as they were easy for guests to pick up and eat while mingling and visiting with other friends.
These are small, light, and tasty! What could be better! Oh…plus they are SO easy to make so you can focus your dinner or party prep energy elsewhere!
This appetizer requires no cooking, just easy assembly. In order to make the caprese bites, skewer half of one grape tomato, basil leaf, bocconcini, and the second half of the grape tomato. Repeat with remaining tomatoes and bocconcini. Drizzle all caprese sticks with reduced balsamic vinaigrette and extra virgin olive oil and then season with salt and pepper, to taste.
- 1 package of 4 inch bamboo skewers
- 1 pint of grape tomatoes (cut in half)
- 1 pound of Bocconcini (Small mozarella balls)
- 24 fresh basil leaves
- Reduced balsamic vinagrette for drizzling
- Extra virgin olive oil for drizzling
- Salt and pepper, to taste
- Skewer half of one grape tomato followed by a basil leaf, bocconcini, and the second half of the grape tomato.
- Repeat with remaining tomatoes and bocconcini.
- Drizzle all caprese bites with reduced balsamic vinaigrette and extra virgin olive oil.
- Season with salt and pepper, to taste.
