These Jalapeño Cornbread Muffins are the perfect side dish to your favorite entree. I recently made these as part of our Chili Bar party and have been munching’ on the leftovers for days! I have gotten so addicted, plus they are just so easy to throw in a Ziploc and add to your lunches, so I may have to make an extra batch here pretty soon!

It’s starting to warm up here in Dallas, but I have my fingers crossed for at least one last cold front before spring fully sets in.  Like many of you, my favorite dish to enjoy on a cold afternoon is a classic bowl of chili. My mom used to always make it when we were snowed in from a blizzard, so this has become a favorite comfort food for me. It takes a little bit of time to make, but it freezes well so you can easily make extras and bring it out on that unexpected chilly day or when you didn’t have time to whip up anything for dinner!

So that’s exactly what I’ve done! I spent the weekend making my favorite chili recipe, probably eating more than my fair share 😱, and freezing the rest for upcoming meals or when I need a little comfort food pick me up on a colder day!

I will admit, I have high expectations when it comes to this classic dish…mainly because every ski lodge has the best dang chili in the world , so I’ve been spoiled with some amazing chili in my day. But I’ll tell ya what! This recipe gives any ski lodge a run for its money! It’s hearty and delicious but still tastes light and healthy!

I love red velvet everything, so I’m always looking for an excuse to make this classic treat. Red velvet is particularly popular around the holidays, so with Valentine’s Day right around the corner, I knew I had to get creative and find a way to incorporate it into my Valentine’s brunch menu! So without further ado, I present to you, Red Velvet Waffles with a Cream Cheese Glaze!

These Red Velvet Waffles are absolutely delicious and are the perfect breakfast twist on a traditional dessert! They are so rich and fluffy, and the light cream cheese glaze pairs beautifully!

With Mardi Gras right around the corner, it’s time to bring out all of our favorite Creole and Cajun recipes! Of course, my favorite dish at any party is dessert, so my mind goes straight to a traditional King Cake, which is the perfect way to top off any Mardi Gras celebration!

This coffee-cake like confection is a popular custom and is adorned in purple, green, and gold sprinkles and shaped like a ring. Traditionally, the King Cake started off as a simple ring of dough, but has since evolved to include a variety of different fillings. Each cake has a tiny plastic or porcelain baby hidden inside and the person who gets the slice with the baby in it hosts the next party! Of course, I am always scoping out the cake looking for the baby! Any excuse to host a party is always welcome!

One of my favorite cocktails of all time is a good ol’ Moscow Mule. It’s a total classic! They are super simple to make, yet taste like a craft cocktail that a mixologist labored over forever!

Besides the absolutely delicious taste, my favorite part of a Moscow Mule is that it only requires a couple ingredients that are easy to keep on hand, so you can quickly mix one up for a last minute guest. It is always fun to offer something a little bit more special than a bottle of beer or glass of wine, and this is the perfect beverage to have ready in your back pocket.

And of course, no Moscow Mule is complete without the signature copper mug! The cold mug brings a sense of formality and authenticity to the cocktail that I swear makes it taste like 10 times better! I have been eyeing these mugs for a year now, and my boyfriend’s mother just got me a beautiful set of hammered copper mugs for Christmas, and I am OBSESSED! (Thank you again!! 🙂 ) Literally obsessed! Now that I own these little gems, you can bet we will be making Moscow Mules at our house regularly!

With the New Year in full swing, we are all trying to be a little bit healthier. However, if you’re like me and Mexican food is one of your favorite cuisines and guilty pleasures, this can be a little bit trickier! So! I am on a mission to make as many different Mexican recipes as possible “healthy” this year! We are starting with this absolutely delicious Chicken Enchilada Spaghetti Squash.

If you haven’t cooked with spaghetti squash much, you are in for a treat! It takes a little bit of time to bake the squash, but it absorbs the flavors of the spices that you are cooking with, so it’s super easy to incorporate into your family’s favorite dishes and you (or your kids!) won’t even know you are eating squash!

The enchilada sauce, paired with the taco seasoning, cheese, and vegetables poured over the spaghetti squash tastes just like your favorite enchilada without the guilt of all the tortillas and carbs! This is one of my favorite dinners to make and always leaves for great lunch leftovers the next day!

When hosting a cocktail party it is always important to prepare appetizers that people can eat with a single hand while mixing and mingling. We are all familiar with that awkward situation when you have a drink in one hand, a small plate and a fork in another, and then a friend comes up to greet you and have to re-situate everything that you are holding just to give a simple hug or handshake! How uncomfortable is that?! I literally hate that situation but find myself in it regularly. 

Therefore, in order to avoid this at my parties, I like to serve easy bite sized appetizers that can easily be served on a napkin, so you don’t have the extra plate to hold on to. Then once your guests have taken their bite, they can easily crumple up their napkin, and voila! A free hand to shake as many hands as they want with!

I recently started including Stonefire naan into my appetizers at cocktail parties. During the holiday season, I love spending winter days on the slopes in Colorado. What is perfect on snowy winter days? (Besides a glass of wine in the hot tub…duh!) Warm and tasty comfort foods! That’s where these Chicken Spinach Artichoke Flatbreads come in!

One of my favorite “I am freezing and need a warm snack” is, of course, spinach artichoke dip with pitas and fresh veggies! I have been making the same dip for years, so it is about time that I mix up the recipe and put a little spin on this traditional dish! Take the work out of snacks to dip and just put the spinach artichoke dip right on a yummy flatbread!

This is the EASIEST appetizer and is perfect for a nice little snack at home or can even be dressed up and served at cocktail parties! I’ve used my favorite pre-made Stonefire naan, which can be found in the bakery or deli section of your local grocery store, and added my homemade spinach artichoke dip to create the perfect flatbread! I also personally like to add poached shredded chicken to give the dish a protein boost, but this can easily be left out for any vegetarians out there. Pro tip for the less calorie conscious: bacon would also be awesome!

With Christmas right around the corner, I have been rushing around finishing all of my last minute Christmas shopping and decorating. I’ve been checking thing after thing off my list, but I have one last gift to make! Gifts for my colleagues and neighbors! I like to hand make these types of gifts because it gives them a little bit more of a personal touch and shows that I put more thought and love into each one.

This year, I decided to make these adorable mason jar hot chocolate mixes! We’ve done all the heavy lifting for you with these cute printables, so all you need is some craft paper, a printer, and the hot chocolate ingredients and you have yourself the perfect little gift! Plus, they are super affordable and only take 10 minutes to assemble, which is always a bonus!

In order to assemble these, all you need is one pint sized mason jar, 6 tablespoons of powdered creamer, 6 tablespoons of powdered milk, 6 tablespoons of powdered sugar, 3 tablespoons of cocoa powder, 2 tablespoons of milk chocolate chips, 2 tablespoons of chopped candy canes, and ½ cup of mini marshmallows.

Layer the powdered ingredients in the bottom of pint sized mason jar and then add the chocolate chips and candy canes. The perfect, affordable, and thoughtful gift for all your friends, neighbors and colleagues!

Ingredients
  1. 1 pint sized mason jar
  2. 12 inches ribbon, string, or twine
  3. 6 tbs powdered creamer
  4. 6 tbs powdered milk
  5. 6 tbs powdered sugar
  6. 3 tbs cocoa powder
  7. 2 tbs milk chocolate chips
  8. 2 tbs candy canes, chopped
  9. ½ cup mini marshmallows
Instructions
  1. Layer the powdered ingredients in the bottom of a pint sized mason jar. Add the chocolate chips and candy canes and then top with the mini marshmallows to fill the jar.
  2. Seal the jar with the lid and attach the printable recipe tag (linked above) with a ribbon.
  3. When ready to enjoy, remove the marshmallows from the jar and set aside. Boil 2 cups of water and add the remaining ingredients to the pot. Mix until fully combined.
  4. Pour the hot chocolate into two mugs and top with marshmallows! Enjoy!
