Roasted red pepper hummus is always a crowd pleaser, so if you are starting out making it at home, give this one a whirl! The red pepper combined with the lemon juice tastes so fresh and delicious and is the perfect topping on any pita chip or veggie!

Roasted Red Pepper Hummus

Ingredients
  1. 1 (15 oz) can garbanzo beans, drained and rinsed
  2. ¼ cup fresh lemon juice
  3. ¼ cup tahini
  4. 2 cloves garlic
  5. 1/2 tsp kosher salt, or more to taste
  6. 1/2 tsp cumin
  7. 1 pinch of cayenne pepper
  8. 2 Tbsp olive oil, plus more for serving if desired
  9. 2 medium red bell peppers, roasted and chopped
  10. Parsley and red pepper flakes, for garnish (optional)
Instructions
  1. Add garbanzo beans, lemon juice, tahini, garlic, salt, cumin, and cayenne pepper in a food processor or blender. Pulse 2 minutes. Scrape down sides and bottom of the food processor/blender.
  2. Add olive oil and ¾ of the chopped peppers. Pulse 1 minute and add 1 tbsp water to thin. Pulse 1 more minute. Add one more tbsp of water if you want it thinner and pulse.
  3. Plate and top with additional olive oil if desired and with remaining small diced red bell peppers.
  4. If desired, garnish with parsley and red pepper flakes. Serve with pita chips or veggies. Enjoy!
